Cinnamon Pumpkin Pull-Apart Bread


So I went home over the weekend and made this bread. I love cooking at my parents house because they have much more space and many more ingredients than I do. Plus, I actually have people to eat what I cook, instead of me feeling like I need to eat the entire thing (not that it's a bad thing) but I like to share with others and get their opinion. So, this bread took me about 3 hours total to bake - but it was absolutely worth it. Plus, most of the three hours was spent allowing the bread to rise, so it wasn't too bad.

Another great thing about this recipe is that most people have all of the ingredients already so there is no need to go to the grocery store or get random ingredients that you will only use once.

My family said this was one of the best dishes I have EVER made. They said it was "perfectly gooey" and tastes like a cinnamon roll with a hint of pumpkin. So if you try it, let me know if you like it or if you changed it at all! thanks!




     Ingredients:
  
       Bread:
        2 Tbsp unsalted butter
        1/2 cup milk
        2 1/4 tsp (1 envelope) active dry yeast
        3/4 cup pumpkin puree
        1/4 cup white sugar
        1 tsp. salt
        2 1/2 cups bread flour

        1 cup granulated sugar
        2 tsp ground cinnamon
        1/2 tsp fresh ground nutmeg
        2 tbsp unsalted buter

    Glaze:
        2 tbsp unsalted butter
        1/8 cup brown sugar
        1 1/2 tbsp milk
        3/4 cup powdered sugar
        1 tbsp Vanilla extract 



In a saucepan over medium-high heat, brown 2 tablespoons butter, letting it bubble up and turn dark golden brown, but be careful not to let it burn (turn black). Once browned, remove the pan from the heat and carefully add the milk, return the stove and heat through. Pour the milk and butter into the bowl of standing mixer (fitted with dough hook) and allow to cool so it is no longer hot but also not cool. Once it has reached a warm but not hot temperature add the yeast and 1/4 cup sugar and allow to proof (top will look foamy and cloudy). Then add the pumpkin, salt, and 1 cup four. Stir until combined then add the rest of the flour 1/2 cup at a time and knead for 6 minutes, until the dough is smooth and elastic and just slightly sticky. If the dough is too moist, add extra flour 1 Tablespoon at a time.

Move dough to a lightly oiled bowl and cover with a clean towel. Allow to rise in a warm place for 60-90 minutes or until doubled in size.

While dough is rising, brown another 2 tablespoons of butter. Add the sugar, cinnamon, and nutmeg and mix well (make sure it is still a sugary consistency). Make sure the sugar evenly absorbs the butter. Set aside. Next, grease and flour a 9x5 loaf pan and set aside.

When the dough has doubled in size, punch it down and flip out onto a clean floured surface and knead with hands for 1-2 minutes. Roll dough into a 20x12 inch rectangle. Evenly sprinkle the dough with the cinnamon sugar mixture and press the dough with palms of hand. Cut the rectangle into 6 strips. Lay strips on top of each other and cut each strip into 6 even squares (cut in half and then each half into thirds). Stack strips vertically into the loaf pan. Cover the pan with a clean towel and let rise for 30-45 minutes. 

In the meantime preheat an oven to 350 degrees. After rising in the pan, bake for 30-40 minutes or until top is a deep golden brown. 


To Prepare the Glaze:
Heat the butter, milk, and brown sugar in a small saucepan. Bring to boil then immediately remove the pan from the heat and stir in vanilla and powdered sugar.

Roxberry Juice: Salt Lake City


Recently, the new City Creek Mall opened in downtown Salt Lake. I went there the other day with some friends and heard they had a Roxberry Juice.  A friend of mine told me Roxberry had really good "green smoothies". These smoothies are made with spinach and other healthy foods, but supposedly still taste really good. 

So, I while I was at City Creek, some of my friends and I tried a few smoothies. 

The Iron Strong smoothie was my smoothie. It was one of the 'Green Smoothies". Iron strong was a mix of limes, spinach, peach juice, peaches, and mangoes. It was delicious. I couldn't taste the spinach at all. It had a strong lime flavor, which I also loved. Also, the smoothie was a lime green color, which was a lot more appetizing than another green smoothie I saw which was a dark green color. 



Mike got the Original Green Smoothie. I don't have a picture of it, but it was a gross dark green color. The Original Green included spinach, kale, mixed berries, bananas, peaches, and stevia or agave. I tasted this smoothie, but didn't like it as much as mine. It had a blander taste and it had a little bit of a 'leafy' taste to it which I didn't like. However, Mike said that the more he drank of the smoothie, the less he tasted the spinach. If you are going with a green smoothie though, I would try the Iron Strong. You won't be disappointed, unless you don't like limes.

Juss ordered the Pomegranate Perfection smoothie. This wasn't one of the green smoothies, it was an all-fruit smoothie. This smoothie originally has pomegranate juice, strawberries, mangoes, and peaches, but Juss is allergic to mangoes so she asked them to leave those out. This was my favorite smoothie out of the three. It was delicious! Better than any Jamba Juice or Keva Juice smoothie I have ever had. It was very sweet, but not overpowering. It tasted a lot like sherbet. If you have a sweet tooth, this would be a good choice. 


Also: Roxberry also has frozen yogurt if you are not in the mood for a smoothie.

FYI: Because City Creek just opened, the line for Roxberry was pretty long when we got there. However, it moved fast and we didn't have to wait long to get our smoothies. If you stop by City Creek, I would recommend trying one of the green smoothies for an experience.

Mi La Cai Noodle House: Salt Lake City

One of my top five places to eat in Salt Lake City is called Mi La Cai Noodle House. It is a Vietnamese restaurant. From the outside, the restaurant doesn't look like much, but the inside is very modern and clean. The food is not only delicious, but the service is great, the portions are large, and it is fairly inexpensive. Mi La Cai won "best Pho" in City Weekly, but my favorite dish is the Pineapple Chicken.

Pineapple Chicken ($7.25):



The Pineapple Chicken dish is for those people who love sweet food with a lot of flavor. It is also healthier because the chicken is not fried. It is chicken with pineapple and bell peppers, covered in a thick red sauce. The sauce reminds me of sweet and sour sauce. The only thing I would change about this dish is that there is too much pineapple in proportion to chicken. If you do not like warm fruit, you probably won't like this meal. 

Shrimp with Cashew Nuts ($9.75):



Shrimp with Cashew Nuts has shrimp, cashews, bell peppers, zucchini, and celery, with a light sauce on top. I wasn't impressed with this dish because it didn't have much flavor. If you are going for a lighter choice, this would work because there is hardly any sauce and there are a lot of vegetables. 

Fried Chicken Noodle Soup ($7.75):

It had a half game hen, which was fried, sitting in chicken broth with egg noodles at the bottom of the bowl. I didn't have the chance to try it, it looked unappetizing to me since there was half a chicken just sitting in the bowl, but my dad said it was pretty good. If you are going for soup, I would get the pho because that is what Mi La Cai is famous for. My favorite is the Chicken Pho.

Don't forget: Try their egg rolls and spring rolls for an appetizer, both are delicious. The spring rolls are wrapped in thin rice paper, which are hard for me to find, usually restaurants fry them. 

Reservations: It would be smart to get a reservation if going on a weekend evening, other than that you should be seated immediately.

Welcome

In pursuit of one of my dreams to become a food critic, I have decided to create a blog. I have been wanting to find a way to record all the delicious food I eat. So, my plan is to try as many different restaurants as I can and put all the standout ones on here so I can share them with the world and also keep a record for myself.  I may add a section for the food I cook as well, but that won't be for a while. 

If you try any of the places I post on here, let me know what you ate and how you liked it! Also, if you have any suggestions let me know!
